The chicken

Of Indian origin the chicken is common throughout Europe , and very reared and consumed in Italy . There are many races and variants of this "bird farmyard" . Here we give  his conventional definitions:

  • YOUNG CHICKEN : up to 3-4 months and a weight  LBS 1,30 (600 g). Excellent for grid and roasted.

  • CHICKEN  :  until maturity and a weight of LBS 2,20 (1, 5 KG) (the typical chicken).

  • HEN : the female producer of eggs. Normally  it deals to older animals, for this reason commonly cooked boiled, very good for the meat broth.

  • cockerelthe young male  of about 6 months. Thanks to the his very thin meat is very good as devilled chicken  or  grilled.

  • farmyard cock : up to a maximum of 10 months.

  • capon  : the  castrated male at the age of about two months. It grows up to a weight of about LBS 4,40 (2, 5 Kg). It is  tasty, however a little fat.

The  ways to cook it are infinite: whole or in parts, suitable for cooking dietary and difficult: as you wish
